In terms of their anti-undead ability, it might be worth considering to give Priests a toned down but broader 'slay evil' ability, something like +40% to undead and any monster that poisons or mana burns.
But it makes more since for the Priest to have monotheism, and the Paladin to have the other. If the Priest is too overpowered after switched, maybe they could nerf the Priest slightly, such as 100 percent health potions down 60-80.
