Gnomes are a one trick pony, boost mana throw fireballs / pissorf. Way more stuff you can do with halflings with way more other elements/approaches. Goblins always sorta hijjack the class, but are also open to way more interactions than Gnomes. Any goblin plays a lot like an assassin if you're doing it right, which is why I rarely pick them for assassins specifically. Gnomes are if you want to reduce your gameplay to just mana pool size and fireball damage, but if you're going that reductive just go pissorf + cb, which is why I play them so little these days.
But yeah, all three play differently, lumping them togather will have you trying to play them all the same way. Which will in turn have you comparing them according how all three can pull off something only one of them is made to do. Goblins play both bars every time, halflings play the health bar (health boosts, physical damage, resistances, dodge potions etc) + god potion shennanigans, and can get significant boosts out of their CP at any stage of the run, gnomes play the mana bar (prefferably only at the boss fight) and that's pretty much it.
For Gnomes go Sorcerer. Start with Elven Boots and prepped Mystera. That's pretty much it.
For Halflings, if you don't want to go Priest because it's silly, go Berserker.
For Goblins, go GG or JJ with something that benefits from levels (any hybrid is good, Thief crops up often in the PQI, anything but VGT is doable with a Goblin Thief).
